Jose “Pollo” Hernandez was born September 25, 1986 in Orange County, CA.
His parents emigrated from Mexico in the early 70’s to live in Fullerton and Jose, the youngest of 5 children has become a well-known icon in the city he proudly calls his hometown. His nickname “Pollo” was inherited because of his family owned business, “El Pollo Fino.” His fans chant the nickname anytime he is seen, inside or outside the ring.

It all began in high school where Jose quickly became a natural in the sport of wrestling.
His strong abilities and talent in the sport led him to a CIF Championship his senior year.
In 27+ years no other wrestling athlete from Fullerton High School had ranked in the respective level. In fact, it was his wrestling coach who trained Jose in high school who had assumed the CIF Championship in the year 1977.

While in high school, Jose excelled in the sport because of his passion for wrestling. He participated in several wrestling camps in different states during his summers in which one of his favorite UFC Champions, Tito Ortiz trained aspiring athletes like himself.

Concluding high school wrestling only led to a new form of contact sports which included: Jiu-Jitsu and boxing. Jose began his training at Evaldo Lima’s Neutral Grounds Brazilian Jiu-Jitsu Academy in Long Beach. He quickly developed a love for the sport and became an MMA fighter in 2008.
